Recipe Suggestions

These suggestions are not meant to be followed to the letter so I have not added exact quantities or methods. They are only meant to serve as suggestions – so get creative and add your own flair and tastes to these and let me know what you think.

Quinoa Salad

  • Cook about 2 cups of quinoa.
  • Oven grill cubed aubergines and baby marrow.
  • Mix cherry tomatoes, pitted olives, 1 chopped scallion, 1 cup chopped fresh parsley and half a cup chopped fresh mint.
  • Prepare the vinaigrette with olive oil, freshly squeezed lemon juice, 1 teaspoon sugar, 1 minced clove garlic and salt and pepper to taste.
  • Mix all the ingredients together and serve.
Options: Frying the quinoa in some Indian spices like cumin, coriander and cayenne before cooking and cooking in vegetable stock adds a nice flavour to the salad. Or use half rice, half quinoa or barley instead. 

Cucumber bites

  • Slice cucumber in 5mm slices and top each piece with an avo square (dipped in lemon juice to keep freshness), a quarter olive and a piece of peppadew.
  •  Sprinkle with chopped chives and herbal salt.
  • This makes a lovely vegan finger snack to enjoy whenever.
Options: Use quartered cherry tomatoes or fresh fruit (berries, cubes of peach, etc.) as a topping.

Guacamole

  • Mash about 4 ripe avos and add half a chopped onion, one chopped tomato, juice of one lemon, 1 finely chopped chillo, some olive oil.
  • Mash in about 2 cups of fresh chopped herbs (rocket, basil, lemon thyme, chives, oregano, mint), and salt and pepper to taste.
  • Mix together and serve it on slightly toasted rye bread or in a wrap (with pineapple cubes and cucumber).
Options: You can also add chopped peppadews and olives to the mix.

Vegan Sushi

  • Put a layer of rice over a sheet of sushi nori.
  • Use julienne carrots, cucumber and strips of avo as a filling.
  • Roll up, cut and serve.
Options: Try some oven grilled black mushrooms as filling – delicious.

Juicing

Juicing is one of the most effective ways of getting healthy nutrients into your system without putting too much strain on the digestive system. Using a good juicer is very important. Fast spinning juicers heat up and kill some of the nutrients. I have found that keeping the ingredients simple is normally the tastiest.

Here are some combinations that you might try:

  • Carrot, apple, ginger and lemon
  • Spinach, apple and mint
Options: You can experiment with any and all veggies and fruits. I recommend sticking with one colour so choose from the following bases: orange (carrots), red (beetroot) or green (spinach).
